Pizza Inspired Wraps

I’m not suggesting these are actual pizza, can or should replace the traditional pizza - there can absolutely be a place for them as part of a balanced diet! However, if I fancy a pizza, but don’t want to buy one or have the time to make a dough, this is one of my go tos!
My Tip: This is just what I made with what I had in but you can try any topping you enjoy! These are really flexible, and can be made to what you like/ have in, and can help to use up any wraps or other ingredients you need to before they go off!
Ingredients
* Wraps of you choice
* Tomato base like tomato purée/ reduced tinned tomatoes
* Your favourite toppings!
Method
1. Slightly toast a wrap on one side under a grill.
2. Remove the wrap & on the untoasted side, add and spread out your tomato base (I used tomato purée).
3. Add your favourite toppings for cooking, I added:
- Sliced fresh tomatoes & red onion, which I had added a drizzle of oil & some garlic then cooked these in the microwave for about 1 minutes to soften before using as a topping.
- Mozzarella & grated cheddar.
4. Place in the middle of the oven, under a medium-low grill for about 5 minutes, allowing the cheese to melt and to avoid the wrap burning (keep a close eye on it!!)
- A minute before removing from the oven, I added some spinach so it had time to slightly wilt but not over cook.
5. It’s ready to remove from the oven, and serve! I served one option with balsamic vinegar and the other with some pear chutney!
