- Double Chocolate Bliss Balls
Double Chocolate Bliss Balls 13th October 2023 MAKES 8-10 Balls TIME 20 mins Elevate your snacking experience with these blissful double chocolate bites which are sweet, and nutty, moorish and crunchy! My Tip: If your mixture is very sticky and you are having a hard time blending it, you can add a small dash of water to help! But don't worry too much, they don't require much blending - its just to mix it all together but they do not need to be finely mixture - in fact, I quite like keeping them crunchy! Ingredients * Small handful of pitted dates (~10) * 40g nuts or your choosing (I had pecans in, so used them) * 1 tsp syrup * 1 heaped tsp crunchy peanut butter * 1 heaped tsp cocoa powder (plus some extra for dusting later) * 2 squares of your favourite chocolate (I’ve used 70% dark chocolate here) Method 1. Chop up your nuts of choice. 2. Add all the ingredients to a blender, and blitz to the texture of your choice. 3. Get about a tbsp of mixture and roll into small balls. 4. Place on a plate and dust with cocoa powder, making sure to cover all the surface. 5. Melt the dark chocolate (only needs 30-40s in the microwave!) and dip the balls in the melted chocolate. 6. Place in the fridge, allow to set, and enjoy!

Tomato Balsamic Chutney 15th September 2023 MAKES 1 Portion TIME 10 mins Tomatoes are such a versatile ingredient! Making them into this quick and simple tomato balsamic chutney is a super tasty way to enjoy them, and can add flavour to lots of dishes! It’s also the perfect recipe for if your tomatoes have gone past their best, helping to avoid food waste! My Tip: I love this on cheesy grilled toast - as on my Instagram! Ingredients * 1/2 Red onion, finely diced * 1 Tsp Rapeseed oil * 1 Garlic clove, crushed * 1 Large handful of cherry tomatoes, roughly chopped * 1 Tbsp balsamic vinegar Method 1. Place the oil in a frying pan on a medium heat.Add the onion and sweat down until softed. 2. Add the crushed garlic and tomatoes. 3. Once softened, add a large splash of balsamic vinegar, remove from the heat, and put on a lid to let the residual heat finish the cooking, making it all soft and sticky. 4. And it’s ready to enjoy with lots of different dishes!

Pizza Inspired Wraps 1st August 2024 MAKES Flexible Servings! TIME 20 mins I’m not suggesting these are actual pizza, can or should replace the traditional pizza - there can absolutely be a place for them as part of a balanced diet! However, if I fancy a pizza, but don’t want to buy one or have the time to make a dough, this is one of my go tos! My Tip: This is just what I made with what I had in but you can try any topping you enjoy! These are really flexible, and can be made to what you like/ have in, and can help to use up any wraps or other ingredients you need to before they go off! Ingredients * Wraps of you choice * Tomato base like tomato purée/ reduced tinned tomatoes * Your favourite toppings! Method 1. Slightly toast a wrap on one side under a grill. 2. Remove the wrap & on the untoasted side, add and spread out your tomato base (I used tomato purée). 3. Add your favourite toppings for cooking, I added: - Sliced fresh tomatoes & red onion, which I had added a drizzle of oil & some garlic then cooked these in the microwave for about 1 minutes to soften before using as a topping. - Mozzarella & grated cheddar. 4. Place in the middle of the oven, under a medium-low grill for about 5 minutes, allowing the cheese to melt and to avoid the wrap burning (keep a close eye on it!!) - A minute before removing from the oven, I added some spinach so it had time to slightly wilt but not over cook. 5. It’s ready to remove from the oven, and serve! I served one option with balsamic vinegar and the other with some pear chutney!
- Mum's Yorkshire Puddings
Mum's Yorkshire Puddings 26th July 2020 MAKES 8 Puddings TIME 35 mins "Everyone loves a well risen yorkshire!" Mum. Mum's Tips: Use crisp and dry oil for the best yorkshires. This recipe makes 8 large yorkshires which open freeze perfectly! Ingredients * 100g Plain Flour * 1⁄4 Tsp Salt * 3 Large Eggs * 225ml Milk * 4 Tsp Vegetable Oil Method 1. Heat the oven to 200degreesC fan. 2. Use two 4 hole yorkshire tins. 3. Put 1 tsp of vegetable oil in each hole. 4. Put the tins in the oven and ensure that the oil is bubbling hot, the hotter the better! Mum sometimes uses a pastry brush to grease/oil the edges of the tins. 5. In a bowl, mix all the ingredients with a whisk, (Mum finds an electric is best!) until pale and there are bubbles in the mixture. 6. Successful yorkshires are all down to the pouring of the batter... use a pouring jug, be quick, do not allow the oven to cool and pour directly into the tins on the oven shelf; pour into the middle of the yorkshire tin holes. (Do not overfill, it does not create bigger or better as they do not rise so well.) 7. Bake for 20 minutes, do not open the oven before they are golden brown. 8. Take out of the oven carefully, as to not knock out the air. 9. Serve with roast dinner. Enjoy!
